Today we are going to Brian's parents to celebrate his birthday with a big dinner. Brian's mom is an incredible cook and she's super sweet to boot. I like to try and make this little number whenever there is a get together over there. I make enough for a couple and then we have at least one here to munch on.
Hawaiian"Comeoniwannaeatcha" Cheese Ball
What you will need:
1 can of crushed pineapple( drain and then squeeze it to get most the juice out of it)
1 bunch of green onions finely chopped
3 bars of reduced fat cream cheese(close to room temp)
1 large bag of pecan chips
*serve with 1 or 2 boxes of Reduced Fat Wheat Thins
How to do it: mix everything but the pecans in a large bowl with a spatula until its evenly mixed. hand form the balls(should make 3 large ones) and yes i just said "hand form the balls" teehee. empty half the bag of pecan chips onto a large plate then roll the balls so that they are evenly covered with the pecans. let chill or eat immediately. I serve it with Reduced Fat Wheat Thins.please remember to breathe. also please remember the pecan chips do not change much throughout the digestion process. Sensitive bums beware.
* this recipe was given to me by my dear friend Abbie. She calls it a Hawaiian CheeseBall. I've altered the name but not the recipe.
